The milk collection centre is located in Fatick. The milk is collected at different collection points and then transported to the milk collection centre where it is cooled down. The milk should preferably be cooled within four hours of milking. When it is chilled it can be transported to the dairy for processing. The challenge is to manage the collection, transportation and cooling without quality losses.
It’s important that an assessment study is made before deciding on where the milk collection centre should be located. This in order to determine, for example, the status of the farms, the density of milk in the region, opportunities for development, access to water and status of roads.
